Exposure : Vineyard slopes facing southeast

Age of vineyards : An average vine age of 30 years

Density of planting : 5000 vines per hectare

Pruning : Hand-pruning of traditional gobelet bush vines.

Farming mode : Fertilizer is not used and instead the ground is worked to have the best expression of the schist soils. Yield of 50 hectolitres per hectare. Leaf reduction in July to bathe the grapes in sun.

Winemaking type : Maceration for 24 hours in stainless steel tank under protection of dry ice then fermentation with low temperatures to express the maximum of fruitiness

Maturing type : On fine lees until just prior to bottling.

Drinking suggestions : The Cabernet of Anjou is a rosé wine ½ dry typical of the region from Anjou. It is a very freindly wine for many foods. This can be consumed young but has a renowned ability to age..
