Exposure : Vineyard slopes facing southeast

Age of vineyards : An average vine age of 24 years

Density of planting : 5000 vines per hectare

Pruning : Hand pruning of Guyot trained vines

Farming mode : Fertilizer is not used and instead the ground is worked to have the best expression of the schist soils. Yield of 22 hectolitres per hectare. Leaf reduction in July to bathe the grapes in sun.

Winemaking : Pneumatic pressing to select juices. Must is racked and chilled for 24 hours. Must run off to new oak barrels of 400 liters for partial alcoholic and malo-lactic fermentation. Daily batonnage until the first racking

Maturing : In oak barrels for 24 months

Bottling : 5000 bottles of Insoumis 2003 were produced.

Recognition : In March 2007, this wine obtained the golden medal in the international competition of Chardonnay du Monde

To drink : A large and complex wine like Burgundy, this will be ideal for strong and rich dishes of poultry and fish.
