Anjou Blancs AOC "Les Maillones""

Grape variety : Chenin 100%

Exposure : Vineyard slopes facing southeast

Age of vineyards : An average age of 25 years

Density of planting : 5000 vines per hectare

Pruning : Hand-pruning of traditional gobelet bush vines.

Farming mode : Fertilizer is not used and instead the ground is worked to have the best expression of the schist soils. Yield of 30 hectolitres per hectare. Leaf reduction in July to bathe the grapes in sun.

Winemaking type : Grapes are pneumatically pressed. Must is racked chilled for 24 hours. Alcoholic fermentation at low temperature followed by total malolactic fermentation.

Maturing type : In oak barrels during four months.

To drink : As an apéritif, or it very much enjoys to be with river fish or scallops with a butter influence or semi-moist goat cheeses.

Peculiarity : We use this particular wine making to allow the wine to best express all the minerallity of a very rich soil and to make a true dry white of minerally finish for gastronomy. "Maillones 2006" has been chosen by the restaurant La Tour d'Argent. Vintage 2005 obtained the prize of "Vinalies" (Concours des oenologues de France).
