Farming mode : Fertilizer is not used and instead the ground is worked to have the best expression of the schist soil. Leaf reduction in July to bathe the grapes in sun.

Winemaking type : Fermentation in stainless steel tank with low temperature under protection of dry ice to with low temperatures to express the maximum of fruitiness followed by a partial or total malo-lactic fermentation according to the vintage.

Maturing type : On fine lees up to just before bottling.

Storage : To Drink now.

Drinking suggestions : Favourite accompaniments are white meats, a fish in sauce, grilled shrimps, as well as a goat cheese.

Peculiarity : At Château de Tigné we have an interesting means to know when the chardonnay is perfectly ripe. We think it is best to observe the squirrels who live in the trees of the park around the Castle. When the chardonnay develops its most beautiful golden color, the squirrels come down to help themselves to some grpaes in the nearby vineyard. The label of this wine is dedicated to these "nice little thieves".
